📜 Description

Removes Spring Boot versions from the CI matrices that no longer get any support from Spring, OSS or commercial, according to the Spring Boot support timeline:

• Spring Boot 2.x: drop 2.4.13, 2.5.15, 2.6.15 (commercial support ended between Feb 2023 and Feb 2024). Keep 2.7.0 and 2.7.18, which have commercial support until 2029-06-30.
• Spring Boot 3.x: drop 3.2.12 and 3.3.13 (commercial support ended 2025-12-31 and 2026-06-30). Keep 3.4.13 (until 2026-12-31) and 3.5.13 (until 2032-06-30).
• Spring Boot 4.x: no change.

The 2.x matrix now starts at 2.7, so the code that turned off GraphQL and Kafka for older 2.x versions can never trigger. This PR removes that branch from the workflow and the matching springBoot2Supports*() version checks from the sample build scripts. The excludeGraphql and excludeKafka properties are still there for local use.

The release 8/11 bytecode target in the Spring Boot 2 samples stays. 2.7.0 ships Spring Framework 5.3.20, and Java 21 bytecode support only landed in 5.3.26 (spring-projects/spring-framework#29966). Only the comment changes, so it names the new oldest version.

💡 Motivation and Context

We are dropping support for these Spring Boot versions in v9 because Spring has also stopped supporting them. They also no longer fit the build: it now runs on JDK 21, but these versions only support up to Java 16–18.

💚 How did you test it?

The changed workflow YAML parses. Gradle was not run locally, so this PR depends on the Spring Boot 2.x/3.x matrix workflows.
